How to Make Pineapple Chicken. Easy Paleo Recipe!

Ingredients:
1 whole chicken precut
1 half fresh pineapple cut into 1 inch pieces
1 half fresh mango skinned and cut into 1 inch pieces
Juice from one whole lemon
2 Tablespoons of extra virgin olive oil
1 half Teaspoon of pepper

Chicken is one of the most versatile foods on The Paleo Diet menu. This pineapple chicken recipe is simple and easy to prepare. It can be either baked or grilled. Be sure to use free range organic chicken to ensure a healthy meal. Pair with a Paleo salad & fresh fruit for a delicious evening meal.

Step One:
Wash the chicken pieces and remove the skin.

Step Two:
Mix the rest of the ingredients in a blender and pour the marinade on the chicken in a baking dish.

Step Three:
Cover with foil and bake at 475 degrees for 45 minutes, or until the chicken is cooked thoroughly.

Serves: 4
